🧮 How We Calculate Your Hot Sauce SHU Value

Understanding how to calculate Scoville Heat Units (SHU) is key to creating perfectly balanced recipes. Our calculator uses a weighted average method that considers both the intensity of heat and the proportion of each ingredient.

The Calculation Formula

Average SHU = Σ(pepper_weight × pepper_avg_SHU) / total_weight

Where total_weight includes all ingredients (base + all peppers), and pepper_avg_SHU is the midpoint between each pepper's minimum and maximum Scoville values.

Understanding the Weighted Average Method

The weighted average method is the most accurate way to estimate your hot sauce heat level because it accounts for the ratio of spicy peppers to the total recipe volume. A small amount of extremely hot pepper in a large batch will produce a milder result than the same pepper in a concentrated sauce.

Example: If you use 100g of jalapeño pepper (2,500-8,000 SHU, average 5,250 SHU) in a 500g sauce batch, the calculation would be:

(100g × 5250 SHU) / 500g = 1050 SHU

This means your final sauce would measure around 1,050 SHU—a mild heat level perfect for everyday use.

Scoville Scale Overview

The Scoville scale measures the concentration of capsaicin, the chemical compound responsible for the heat in chili peppers. Our calculator provides three values:

  • Minimum SHU: The lowest possible heat level, calculated using each pepper's minimum value
  • Average SHU: The most realistic heat level, using the midpoint of each pepper's range (defines the heat category)
  • Maximum SHU: The highest possible heat level, calculated using each pepper's maximum value

These three values give you a realistic range for your recipe's heat level, accounting for natural variations in pepper maturity, growing conditions, and genetics.

🌱 About Gombai Chili

Rita és Gábor, a Gombai Chili alapítói, frissen szedett chili paprikákkal Rita and Gábor, founders of Gombai Chili, holding baskets of chili peppers

2016-ig csak hegyes erőst fogyasztottunk – ami azért, lássuk be, más világ. Aztán megkóstoltuk Gabko legerősebb sárga szószát, és nem volt kérdés: bele kell ásnunk magunkat a chiliszószok világába.

Fun fact: Gomba község neve ihlette a gomba kabalánkat – ezért találkozol vele a címkéinken is.
