Understanding how to calculate Scoville Heat Units (SHU) is key to creating perfectly balanced recipes. Our calculator uses a weighted average method that considers both the intensity of heat and the proportion of each ingredient.
Average SHU = Σ(pepper_weight × pepper_avg_SHU) / total_weight
Where total_weight includes all ingredients (base + all peppers), and pepper_avg_SHU is the midpoint between each pepper's minimum and maximum Scoville values.
The weighted average method is the most accurate way to estimate your hot sauce heat level because it accounts for the ratio of spicy peppers to the total recipe volume. A small amount of extremely hot pepper in a large batch will produce a milder result than the same pepper in a concentrated sauce.
Example: If you use 100g of jalapeño pepper (2,500-8,000 SHU, average 5,250 SHU) in a 500g sauce batch, the calculation would be:
(100g × 5250 SHU) / 500g = 1050 SHU
This means your final sauce would measure around 1,050 SHU—a mild heat level perfect for everyday use.
